Tapanappa ‘DEFINITUS’ 2022 Pinot Noir

The Tapanappa ‘DEFINITUS’ 2022 Pinot Noir is an intense expression of the unique Definitus Foggy Hill vineyard site in a cool year. The wine is translucent with a carmine hue.

The aroma is of ripe strawberries and delicate jasmine. There is an underlying dried thyme and olive tapenade fruit aroma. The oak provides a complex but muted cedar and Chinese five spice bouquet and all of this is reflected in the flavour of the wine.

The flavours are ripe, intense and fresh. It is the tannins that set this wine apart, firm but rounded, giving the wine real texture and length.

The Tapanappa ‘DEFINITUS’ 2022 Pinot Noir is a reflection of perfectly ripe fruit in the cool season from which it was made and is a typical expression of the unique Foggy Hill Definitus terroir.

Vintage Notes

2022 vintage was the third consecutive cooler vintage after a sequence dominated by aboveaverage temperature vintages from 2006 to 2019.

2022 at Foggy Hill was cool with a growing season heat summation (HDD) of 1306°C versus the average of 1342°C days. In 2022 there were no heat waves and only three months were

slightly above average temperature.

Inclement weather at fruit set in late November established a tiny crop of 4 tonnes/hectare that was harvested between the 2nd and 5th of April, 3 weeks later than average.

In 2022 Foggy Hill delivered disease free, thoroughly ripe fruit in perfect condition at moderate sugar levels.

Winemaking Notes

The hand-harvested Pinot Noir fruit from the Definitus section of the Foggy Hill Vineyard was delivered to the Tapanappa Winery in the Piccadilly Valley.

Because of the cool vintage, no whole fruit was included in the fermentation tubs. The tubs were filled with destemmed, crushed and chilled must, then were immediately inoculated with our own grown yeast strain and allowed to ferment to a maximum temperature of 33°C with daily hand plunging of the cap.

At the end of fermentation after 16 days, the Definitus tubs were sealed to allow 5 days of maceration on skins then pressed to barriques (one-third new) with an inoculation of a malolactic bacterial strain.

After malolactic fermentation on full lees, the Definitus was racked and returned to barrique for maturation. After 8 months in barrique wine made from the Definitus was clear racked, ready for bottling in January 2023.
